En ouvrant son restaurant gastronomique en 2003 et le Bistrot Desavie en 2016, il a cr\u00e9\u00e9 une institution et embarqu\u00e9 avec lui une \u00e9quipe attentionn\u00e9e et d\u00e9vou\u00e9e \u00e0 la gastronomie, au service de clients fid\u00e8les, amoureux d\u2019une cuisine sinc\u00e8re tout enti\u00e8re tourn\u00e9e vers le produit. 20 ann\u00e9es valbonnaises et une passion intacte pour le partage et le plaisir du go\u00fbt. Installons-nous quelques instants \u00e0 sa table\u2026<\/p>\n\n\n\n<p><strong>Daniel, vous f\u00eatez les 20 ans de votre restaurant gastronomique. Mais l\u2019histoire a d\u00e9but\u00e9 il y a quelques ann\u00e9es d\u00e9j\u00e0\u2026<\/strong><\/p>\n\n\n\n<p>Oui, c\u2019est un parcours qui a commenc\u00e9 \u00e0 l\u2019\u00e2ge de 14 ans. Ma scolarit\u00e9 dans le primaire n\u2019\u00e9tait pas \u00e9vidente, plut\u00f4t perturb\u00e9e. Mes parents m\u2019ont donn\u00e9 quelques jours pour r\u00e9fl\u00e9chir \u00e0 choisir un m\u00e9tier manuel. A 14 ans, vous savez, vous n\u2019\u00eates pas tr\u00e8s inspir\u00e9\u2026 Trois choix se pr\u00e9sentaient \u00e0 moi&nbsp;: menuisier car j\u2019adorais le parfum du bois, la mati\u00e8re\u2026 Je pensais aussi au travail de tapissier car l\u2019\u00e9poque \u00e9tait aux meubles recouverts de papiers peints : je recouvrais des armoires, des chaises&nbsp;! C\u2019est mon fr\u00e8re, avec qui j\u2019avais beaucoup d\u2019affinit\u00e9s et qui \u00e9tait cuisinier, qui m\u2019a finalement orient\u00e9.<\/p>\n\n\n\n<p><strong>Vos parents \u00e9taient de la partie aussi\u2026<\/strong><\/p>\n\n\n\n<p>Ils avaient un commerce d\u2019alimentation, des produits traiteur hauts de gamme, des vins fins\u2026 Ils avaient leur laboratoire et d\u00e8s l\u2019\u00e2ge de 10 ans, j\u2019y aidais mon p\u00e8re \u00e0 faire des tartelettes, des appareils \u00e0 quiches\u2026 J\u2019aimais d\u00e9j\u00e0 l\u2019atmosph\u00e8re de ce m\u00e9tier !<\/p>\n\n\n\n<p>Mais c\u2019est l\u2019apprentissage qui a \u00e9t\u00e9 pour moi un virage \u00e0 90\u00b0 ! Je me d\u00e9couvrais ! Motivation, travail acharn\u00e9, et des r\u00e9sultats, enfin\u2026 J\u2019ai fait mon apprentissage en trois ans, jusqu\u2019en 1967, au Bourgogne, \u00e0 Troyes, un \u00e9tablissement une \u00e9toile au guide Michelin. J\u2019ai termin\u00e9 premier au CAP dans le d\u00e9partement, j\u2019\u00e9tais fi er !
