Intimement persuad\u00e9 que la meilleure place qu\u2019il occuperait dans sa carri\u00e8re professionnelle serait aux fourneaux, le jeune homme n\u2019a pourtant pas mis\u00e9 tout de suite sur la cuisine. Mais on revient toujours \u00e0 ses premi\u00e8res amours\u2026 Aujourd\u2019hui, c\u2019est la trattoria Da Vinci du groupe Riviera Society qui compte sur les talents du jeune chef pour faire voyager ses clients au c\u0153ur de l\u2019Italie, entre pizzas, pastas, sourires et convivialit\u00e9 latine. Th\u00e9o nous raconte son parcours.<\/p>\n\n\n\n<p>Ouvert fin d\u00e9cembre 2024 \u00e0 Antibes, Da Vinci, dernier n\u00e9 du groupe de restauration Riviera Society, emmen\u00e9 par Vincent Halby, compte d\u00e9sormais sur les talents de Th\u00e9o Maucourent, ancien chef du Bistrot Margaux, pour se voir insuffler un bel esprit d\u2019\u00e9quipe en cuisine et la continuit\u00e9 d\u2019une cuisine de qualit\u00e9, servie dans le cadre typique des trattorias italiennes.<\/p>\n\n\n\n<p>Une mission enthousiasmante pour Th\u00e9o, qui n\u2019est pas un petit nouveau dans le groupe\u2026 Arriv\u00e9 pour une mission d\u2019int\u00e9rim afin de remplacer la cheffe de la Piazza \u00e0 Shopping Promenade Riviera, il connaissait d\u00e9j\u00e0 les lieux pour y avoir travaill\u00e9 auparavant.<br>Son parcours est \u00e9tonnant, loin des conventions. \u00ab J\u2019ai commenc\u00e9 la cuisine un peu plus tard que les autres\u2026 \u00bb sourit-il. C\u2019est apr\u00e8s un bac g\u00e9n\u00e9ral obtenu avec mention, que le jeune homme d\u00e9cide de pousser la curiosit\u00e9 de continuer ses \u00e9tudes : \u00ab je ne voulais pas me couper tout de suite de cette vie sociale : \u00eatre tout jeune apprenti en cuisine, c\u2019est un passage que je devinais difficile \u00bb.<\/p>\n\n\n\n<p>Alors Th\u00e9o commence un DUT Techniques de commercialisation \u00e0 Cannes.
