Rencontre.<\/p>\n\n\n\n<p>&nbsp;\u00ab Je suis un produit d\u2019importation en provenance de l\u2019Allier\u2026 \u00bb aime-t-il \u00e0 se pr\u00e9senter. Il est toujours int\u00e9ressant de pr\u00e9ciser l\u2019origine de l\u2019appellation quand on a d\u00e9j\u00e0 vu du pays, car \u00e0 tout juste 34 ans, Arnaud Rives compte d\u00e9j\u00e0 de belles adresses \u00e0 son actif, des tables \u00e9toil\u00e9es aux brasseries hupp\u00e9es de stations de sport d\u2019hiver en passant par les palaces azur\u00e9ens.<\/p>\n\n\n\n<p>De ses souvenirs les plus lointains, le jeune chef du Golden Beef garde en m\u00e9moire une enfance champ\u00eatre aupr\u00e8s d\u2019un grand-p\u00e8re amoureux de son jardin, \u00ab o\u00f9 on b\u00eachait pour les endives, les patates, o\u00f9 l\u2019on ramassait le persil, j\u2019adorais \u00e7a ! Par la suite, je m\u2019imposais souvent pour pr\u00e9parer des petits plats ou cuisiner pour \u00e9pauler ma m\u00e8re\u2026 \u00bb<\/p>\n\n\n\n<p>Et s\u2019il serait exag\u00e9r\u00e9 de dire qu\u2019on entre en cuisine comme en religion, les casseroles, c\u2019est quand m\u00eame une affaire de vocation\u2026 Dans sa famille, si personne ne s\u2019\u00e9tait lanc\u00e9 dans le monde de la restauration, le p\u00e8re d\u2019Arnaud, ing\u00e9nieur, lui avouera un jour qu\u2019il nourrissait secr\u00e8tement des envies de s\u2019essayer \u00e0 l\u2019art culinaire&#8230; Alors quand son fils, \u00e0 l\u2019\u00e2ge de 9 ans, clame d\u00e9j\u00e0 haut et fort sa passion pour les fourneaux, c\u2019est sans un mot qu\u2019il l\u2019emm\u00e8ne tr\u00e8s t\u00f4t un matin \u00e0 Nevers, observer le travail du service dans une maison \u00e9toil\u00e9e\u2026.
