Tout juste revenu aux fourneaux, le chef f\u00eate les dix ans de son arriv\u00e9e au Cannet, o\u00f9 la magie des lieux op\u00e8re de la terrasse jusqu\u2019\u00e0 l\u2019assiette, dans un charme proven\u00e7al unique.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Est-ce le r\u00eave de tout chef que d\u2019avoir son propre \u00e9tablissement ?<\/h2>\n\n\n\n<p>Je n\u2019avais pas forc\u00e9ment envie d\u2019\u00eatre \u00e0 mon compte, mais de nombreux facteurs ont particip\u00e9 \u00e0 ma prise de d\u00e9cision. En d\u00e9couvrant la Villa Notre-Dame des Anges, j\u2019ai \u00e9t\u00e9 compl\u00e8tement charm\u00e9\u2026 Nous sommes ici dans un environnement naturel d\u2019exception, aux portes de la ville, dans une ambiance proven\u00e7ale incomparable !<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Vous venez de f\u00eater vos dix ans, le 10 mai, en mode confin\u00e9\u2026<\/h2>\n\n\n\n<p>La fermeture a \u00e9t\u00e9 abrupte et en 4 h il a fallu prendre des d\u00e9cisions radicales. La date anniversaire correspondait aux d\u00e9buts du d\u00e9confinement, mais pas pour les restaurateurs. Mais restons positifs, nous venons de vivre dix belles ann\u00e9es, en ouvrant en 2010 cette magnifique bastide et en ayant d\u00e9croch\u00e9 d\u00e8s 2011 deux \u00e9toiles au Guide Michelin. C\u2019est une cons\u00e9cration pour nous. En attendant la troisi\u00e8me\u2026 !<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Vous avez aussi ouvert le Bistrot des Anges. C\u2019est une belle aventure, mais ce n\u2019est pas la m\u00eame cuisine que de g\u00e9rer deux \u00e9tablissements\u2026<\/h2>\n\n\n\n<p>Nous sommes dans une logique de gestion du quotidien\u2026 sur le long terme. Nous sommes toujours dans une dynamique de d\u00e9veloppement, de projets, mais le principal est surtout de prendre soin de bien s\u2019entourer. La restauration, ce sont de nombreux m\u00e9tiers tr\u00e8s diff\u00e9rents, avec des fonctions supports telles que la comptabilit\u00e9 et le commercial.
