D\u00e9couper le foie gras frais en cubes. M\u00e9langer le tout. A l\u2019aide de film alimentaire, r\u00e9aliser un boudin d\u2019une longueur \u00e9quivalente \u00e0 celle du filet mignon. Pr\u00e9chauffer le four \u00e0 180\u00b0. \u00d4ter le surplus de gras du filet mignon, couper le filet dans le sens de la longueur de mani\u00e8re \u00e0 obtenir une grande escalope. Si besoin, aplatir la viande \u00e0 l\u2019aide d\u2019un rouleau \u00e0 p\u00e2tisserie. Farcir le filet mignon avec la pr\u00e9paration \u00e0 base de fruits secs, refermer puis ficeler le tout pour former un r\u00f4ti. Faire chauffer l\u2019huile et le beurre dans une sauteuse puis faire revenir le filet mignon deux minutes sur chaque face. Placer le filet mignon dans un plat allant au four avec le jus de cuisson et une \u00e0 deux cuill\u00e8res \u00e0 soupe d\u2019eau.<\/p>\n\n\n\n<p>Faire cuire au four pendant 20 minutes environ en arrosant de jus \u00e0 mi-cuisson. Eplucher et \u00e9vider le potimarron Faire cuire le potimarron \u00e0 la cocotte minute pendant environ 20 minutes. Mixer le potimarron avec le lait et 60 g de ch\u00e2taignes. Saler, poivrer. Rajouter un peu d\u2019eau de cuisson si n\u00e9cessaire, afin d\u2019obtenir la consistance souhait\u00e9e. Hacher le reste de ch\u00e2taignes. R\u00e9server. Servir le filet mignon en tranches accompagn\u00e9 de pur\u00e9e de potimarron parsem\u00e9e d\u2019\u00e9clats de ch\u00e2taignes. Cr\u00e8me liquide, le beurre, la fleur de sel et le m\u00e9lange 5 baies concass\u00e9. Ajoutez un peu de jus de cuisson si la pur\u00e9e est trop \u00e9paisse et mixez 1 minute \u00e0 nouveau. \u00c9gouttez les raisins de Corinthe. Servez la pur\u00e9e chaude en r\u00e9partissant les fruits secs sur chaque portion.
